Caribbean Rice and Peas Recipe
Caribbean rice and peas recipe: rice and peas is a staple everywhere in the Caribbean and is
served with almost every meal in the Dominican Republic. You can either use dried red kidney
beans which have to soak in water over night or canned beans which saves a lot of time.
Ingredients
- Can of red kidney beans (14 oz)
- 2 cups of criolla (rice)
- 3 ½ cups water
- 3 cloves of crushed garlic
- ½ a small onion finely diced
- 2 tblspns oil
- ½ cup of coconut cream
- 1 sweet pepper diced
- ½ teaspoon allspice
- j teaspoon oregano
- Fresh thym
- Salt & pepper
In a large saucepan, caramelize the onions in the oil over medium heat. Add the coconut,
garlic, allspice, sweet pepper and oregano and continue to sauté for a couple minutes. Pour
in the water and bring to a boil, then stir in the rice and beans - making sure that all of
the rice gets coated with the ingredients. Cover and lower the heat – allow to simmer for 20
– 30 minutes. Uncover and season with salt, pepper and the fresh thym.
This dish is served as a side to just about everything in the Dominican: fish; meat;
vegetarian – no matter, everyone eats rice and peas.
